twelve desserts ~ strawberry pretzel salad

this is dessert #1 ~ which i feel guilty posting considering i haven't even finished posting my twelve meals from last year! *note to self: finish posting those stat!!!* but honestly i wanted to share this one now in case you need a little dessert for tomorrow ~ this one will definitely score you points :)

cook time is only 10 mins, but there are a couple parts that have to sit in the fridge for a while, sooo i would say total time is about 2 hrs.

serving size = 16

ingredients:
~ 1 1/2 cups crushed pretzels
~ 4 1/2 tablespoons white sugar
~ 3/4 cup butter, melted
~ 1 cup white sugar
~ 2 (8 ounce) packages of neufchatel cheese *it's not as bad for you as cream cheese* 
~ 1 (8 ounce) container frozen whipped cream *thawed*
~ 1 (6 ounce) package strawberry flavored gelatin
~ 2 cups boiling water
~ 1 (16 ounce) package frozen strawberries

directions:
 ~ preheat oven to 350 degrees f. mix together pretzels, sugar, and melted butter. press into the bottom of a 9 x 13 inch pan. bake for 10 mins, or until lightly toasted, and then set aside to cool completely.

*i think the recipe could have used more pretzels for the crust, so if you want to adjust your recipe based on that note... go for it. :)*


~ in a medium bowl, beat the sugar and neufchatel cheese until smooth. fold in whipped cream. spread evenly over the cooled crust. refrigerate until set, about 30 minutes.

*try to contain yourself, and don't eat too much of the mixture! it's soo good even on it's own*



~ in a medium bowl, stir together the gelatin mix and boiling water. mix in the frozen strawberries, and stir until thawed. pour over neufchatel & whipped cream mixture in pan. refrigerate until completely chilled, at least 1 hour.



~ serve and enjoy!


probably one of the easiest, and most yummy desserts so you definitely need to try it, and tell me what you think!
