twelve meals ~ truffle tortellini

i can't believe it's been a week since i've blogged! i sound like a broken record, but i've just been sick. it's definitely nice to see so many kind messages and well wishes ~ i am making time tonight to get back to everyone because it really means the world that you guys care so much :)

soo on to my post: 

meal number seven was a quick & easy meal... four cheese tortellini w/black truffle oil and shaved cheese on top.

 *i know i was supposed to make blueberry muffins and lasagna first, but i have sort of put both of those off. not a surprise really since i am a professional procrastinator ~ i still have them on my list of meals to make before the year is over soooo hopefully that will happen.*

the tortellini was packaged, which felt like cheating, but at the end of the day, i still had to cook it so i don't feel to guilty.

i will say, that i thought for some reason that the tortellini had a little sauce in the package, but if i had actually read it, i would have seen that it said "adding olive oil OR tomato sauce will complete the meal" oops. too bad we didn't have tomato sauce!!

because i didn't have any sauce, i ended up making up my own plan. scary! i chopped up some baby bella mushrooms, and sautéed them in black truffle oil. the way to my ♥ is truffles. :) i love steaks with truffle sauce, truffle mac n cheese, and obviously pasta with truffle oil. yummy!

after everything was mixed together, i topped it off with a little shaved cheese.

the mister and i both agreed, next time, even with the truffle oil... we prefer a little sauce. i think if i mix the mushrooms and oil into an alfredo sauce it would be perfect.

seriously this was the most easy breezy meal i have made so far. :) now just five more meals to go, with only two weeks to do it. uhhh scary!

This sounds so good! I might have to make this. I've never used truffle oil before. Interesting.

I love tortellini!!! And, let me tell you, Alfredo sauce is a perfect partner for them!!!

mmm! that looks amazing, even without sauce. i've never used truffle oil... i'll have to check that out.
